Combine oats, optional chia seeds, non-dairy milk, pineapple, vanilla, and agave nectar in a small jar. Stir and press down with a spoon to ensure all oats have been immersed in the non-dairy milk.
Cover with lid and chill in the refrigerator overnight.
To serve, stir in a little more coconut milk, if desired, for consistency. Then, top with coconut for a little crunch.
