Ingredients
  

  • 1 large zucchini sliced into rounds 1-inch thick (10-12 slices)
  • 1 tablespoon extra-virgin olive oil or to taste
  • 1 pinch salt or to taste
  • 1/4 cup tomato sauce or marinara sauce
  • 1/3 cup non-dairy cheese shredded
  • 1/3 cup olives sliced
  • 1 tablespoon oregano leaves fresh and chopped or dried

Instructions
 

  • Preheat the oven to 350° F.
  • Place the zucchini rounds on a baking sheet, brush each with olive oil, and add a pinch of salt. Bake until slightly tender for 5 minutes.
  • Spoon a thin layer of sauce over each slice, and top with non-dairy cheese shreds, olives and oregano.
  • Bake until the zucchini is tender and cheese is melted, which should take roughly 10 minutes depending on zucchini round thickness.
  • Serve warm.
