In a large skillet, sauté onion in olive oil until translucent. Add garlic and continue to sauté for another 30 seconds. If using a plant-based ground product that must be cooked before using (such as Beyond Beef), be sure to brown that as well.
Now, transfer onions and garlic to the slow cooker. Add the veggie crumbles, tomato sauce, red wine, basil and Italian seasoning.
Next, add the whole tomatoes, breaking them up as you add each one.
Cover and cook on low for 3.5 hours or so.
Carefully remove the lid and stir in the nearly al dente ziti. Continue to cook for another 30 minutes to meld the flavors. Stir in the fresh parsley just before serving.
Dinner's ready! Serve your slow cooker ziti with a sprinkle of vegan parmesan and a chunk of warm, crusty bread.
