Equipment

Ingredients
  

  • 2 each mangos peeled and cubed to 1/4 inch
  • 1 medium apple peeled and cubed to 1/4 inch
  • 1 small onion minced
  • 1 clove garlic minced
  • 1 1/2 tablespoons ginger root grated
  • 1/4 cup coconut sugar
  • 1 teaspoon salt
  • 1 each cinnamon stick
  • 1 each star anise
  • 1/4 cup white wine vinegar
  • 1/4 cup water

Instructions
 

  • Add all ingredients to a medium saucepan, and bring to a boil over medium heat.
  • Once it starts boiling, reduce the heat to low and simmer for 40 minutes, covered, stirring occasionally. If it becomes too sticky at the bottom of the pan, add a splash of water and stir.
  • After 40 minutes, turn off the heat and transfer the chutney to a clean mason jar and cool to ambient temperature. Once it cools, close the jar. Enjoy now, or keep it in the fridge for up to 3 weeks.

Notes

For long term storage, be sure to follow proper canning techniques. When proper canning techniques are followed, mango chutney will keep in the pantry for up to a year. In addition, you can simply freeze your chutney. This chutney will keep up to a few months in the freezer without losing flavor.
