If you cut your slices too thick, they may start to brown yet remain soft in the middle after cooling. This is easily the most common error when it comes to baking chips. You have a couple of options here. You could just eat them immediately as a roasted beets & sweets side dish or stuff them in a taco with some black beans, shredded cabbage and avocado. However, if you’re like us, you probably want actual beet and sweet potato chips. For the rest of us, I recommend a dehydration protocol. Heat your oven to back up to 200-250 degrees and let them hang out in the heat until they crisp up. Check in on them frequently, as you want them to be crisp… but not tough!
